The 2024 Scar of the Sea Old Vine Palomino from Lopez Vineyard in Cucamonga Valley is a unique, unfortified wine inspired by the traditional styles of Jerez. Made from dry-farmed grapes planted in 1918, this wine has a medium gold color and offers aromas of golden apples, pears, chalk, ginger, and dried herbs. The medium-bodied palate features honeyed fruits, oxidative walnut tones, and a briny, refreshing acidity, culminating in a long, textural finish. The grapes were foot-treaded and soaked on the skins for 9 days before being fermented with native yeast in old French oak barrels. Aged on lees for 8 months, this wine was bottled with minimal sulfur and no fining or filtration. With only 96 cases produced, it pairs excellently with smoked foods, vegetables, seafood, sushi, and spicy dishes, offering a distinct and complex wine that reflects its historic terroir.
