Corte Ferro Grillo, Sicily DOC '23

Corte Ferro's Grillo is a premium wine crafted from the flagship Grillo variety of western Sicily. Sourced from the highest hill to enhance its freshness and flavor, this wine is aged in oak and acacia tonneaux, imparting a delicate note of oak and acacia to its body. The result is a wine that blends intensity and elegance, with a wide bouquet and a natural delicacy. The wine undergoes cryomaceration in stainless steel tanks at 4°C, followed by soft pressing and fermentation at 16°C in oak and acacia tonneaux. It is then aged "sur lies" with two daily batonages and undergoes final bottle aging for two months. This wine pairs beautifully with refined fish dishes, vegetable-based pastas, and especially grilled swordfish, a hallmark of Sicilian cuisine.
